Stew of chicken thighs in tomato sauce

Components:

An excellent, quick stew for a late dinner. Serve with noodles or rice. - 500 - 600 g of boned chicken thighs (boneless and skinless) - 100 g of mushrooms - 100 g oyster mushrooms (or only oyster mushrooms or mushrooms, but preferably mixed) - 400 - 500 g of tomato passata - a few thin slices of bacon - 1 medium red pepper - 1 medium onion - 2 cloves of garlic - a few cherry tomatoes - a pinch of chili - cayenne - a pinch of cumin - rosemary - fresh leaves or a pinch of dried - salt and pepper to taste - olive oil - spaghetti pasta

Preparation:

1. We start by cutting the bacon into smaller pieces. This thinly sliced bacon, after frying, will give us the fat in the pan and it will become crunchy, and we will use it to finish the meal on a plate.


2. Fry the bacon in a well-heated saucepan, arranging it not too thickly. If it blushes on one side, turn each piece to the other side.


3. Now you have to cut parts of the chicken, shredding them into stew pieces.


4. After removing the bacon from the saucepan, a lot of fat will remain, then throw in the chicken. At the beginning, let it fry for a few minutes, do not mix it.


5. You can put salted water on the pasta on the burner.


6. Now chop the vegetables, mushrooms and peppers into small pieces.


7. Cut the onion into large cubes.


8. Cut the garlic finely. Remember to add garlic to the pan at the end of frying.


9. Season the fried chicken with salt and pepper (about 1/3 teaspoon each)


10. Peppers and onions can be added, but not garlic. Fry for about 5 minutes, stirring frequently.


11. We cut the oyster mushrooms into large cubes.


12. And mushrooms for four or eight if they are larger.


13. Add garlic to fry. Mix and fry for 1 minute.


14. Add the oyster mushrooms and mushrooms.


15. Season with caraway seeds and a pinch of chili.


16. We also throw in rosemary leaves.


17. Add in 2 tablespoons of olive oil. We mix everything and fry for a few minutes.


18. Add the tomato passata to the saucepan.


19. We also add 100 ml of water (more or less). Simmer a few minutes under the cover and try. If not salty or too acidic, add salt and a pinch of sugar.


20. The boiling water is here, let's cook the pasta.


21. Cut the tomatoes into halves.


22. And add to the stew. We mix.


23. We already turn off the burner and leave it covered for a minimum of 5 minutes.


24. We are preparing a plate. Pasta on the bottom, stew on it, and on top a few slices of crispy bacon.
